Delicious Wheat-Free Christmas Cake Recipe!

Hello everyone! Season’s greetings to you all. I hope you are enjoying a lovely Christmas Eve with your family and loved ones. This is a fantastic healthy recipe to make the night before christmas and enjoy as a guilt free treat on christmas day, or indeed any time of the year.

As promised here is the recipe for the delicious, healthy Christmas Cake I posted on facebook, twitter and instagram that made your mouths water. Thank you to everyone who liked and shared the post on facebook!

What you need:

-1kg mixed dried fruit

-150g of organic butter or coconut oil

-3/4 cup of water

-The zest of one lemon and one orange

-Juice of 1 orange

-4 teaspoons of cinnamon

-2 teaspoons of ginger powder

-2 tablespoons of blackstrap molasses

-1 cup of almond meal

-1/2 cup of coconut flour

- 4 eggs

-Almonds, brazil nuts and glace cherries for decorating


Heat a large pot on the stove. Melt the butter/coconut oil into a liquid, then add the fruit, water, lemon and orange zest, and juice of the orange – combine and bring to a simmer. Add in the cinnamon, ginger and blackstrap molasses, combine throughly until all melted together. Simmer for 10 minutes, then remove from the heat and allow to cool for 30 minutes, until room temperature.

While the fruit mixture cools: Preheat the oven to 150 degrees C or 300F. Beat the eggs and set aside. Combine the Coconut flour and almond meal in a bowl. Once the fruit mixture is room temperate, add in the eggs and then flour mixture and stir until well combined.

Line a 20cm x 20cm baking tin with a couple of layers of baking paper (the paper should reach up past the edges of the tin), then spoon in the mixture. Flatten the top and place on your decorations – you can choose your own pattern – as you can see I chose a star.

Bake in the oven for 2 hours at 150C or 1.75 hours at 300F. Check with a skewer 15 minutes prior to the end of cooking time to see if it’s done- if the skewer comes out clean you should be good.

Remove from the oven and cool to room temperature, then remove from the tin- still wrapped in the baking paper and put into a large tin or plastic container. Allow to cool completely before refrigerating.
