Today I’m sharing one of the delicious recipes from the Lithe Fit and Toned Nutrition and Lifestyle Program, Bek’s Quinoa Hotcakes. One of the many tasty, quick and easy recipes from the Plan. If you love pancakes this recipe is for you!
Bek’s Quinoa Hotcakes
These make a delicious quick and easy breakfast that is high in protein, good fats and fibre. These also have the added benefit of being wheat and dairy free!
- 1 egg
- 1/2 cup almond meal or ground flaxseeds
- 1/2 cup quinoa flakes
- 1/4 cup almond milk
- small amount of pure butter or olive oil for cooking
Combine ingredients. Heat a frypan on medium heat until the oil/butter becomes liquid. Spoon the liquid to make 4 small hotcakes. Cook for approx 1.5 minutes on one side, until bubbles start appearing on top, turn and repeat on other side.
Serve with 1/2 cup of berries and a small drizzle of natural honey, yum!
